Based in Boulogne-sur-Mer, Établissements JC David specializes in the premium salting and smoking of fish (including herring, haddock, salmon, cod, mackerel, and others) and is renowned for its craftsmanship and the exceptional quality of its product range.

Offering

Établissements JC David preserves a unique and ancestral expertise in cold smoking over oak wood, using its 40 traditional smoking ovens (coresses), where fish are smoked for 16 to 24 hours. This artisanal know-how, combined with the quality of its products and services, has earned recognition from some of France’s most renowned chefs.

The company’s products are primarily distributed through fishmongers, delicatessens, and the foodservice sector. Employing more than 50 people, Établissements JC David is a member of the Collège Culinaire de France and holds both the Entreprise du Patrimoine Vivant (EPV) label and the PME+ certification in recognition of its commitment to quality, heritage, and corporate social responsibility (CSR).
